Having originally started a small business from home nearly 15 years ago, Penelope has made cakes for a number of prestigious venues including Harrods, London Zoo and St. Paul's Cathedral. Penelope now works as a freelance trainer and is lucky enough to have taught all over the world. Some of the countries she has worked in include Vietnam, UAE, Australia, Malaysia and Hong Kong. She specialises in commercial bakery training, events and classes, as well as recipe and product development. She has worked with and taught some of the best in the cake decorating industry and loves working closely with the top names in the sugarcraft world.

She launched her business, Delicious Occasions, over six years ago and now supplies cakes to some of The South East’s most prestigious venues. A presenter on Cake Decorating TV, Claire loves to share her passion and expertise with those eager to learn the art of cake decorating both online and in the classroom.

Tara is a sugar flower artist based in London. She previously supplied sugar flowers to home bakers and professional cake companies. In 2016 Tara began teaching her techniques both privately and in group classes throughout the UK. Her work has been featured in Town and Country, Cake Decoration and Sugarcraft, You and Your Wedding, DIY Weddings and Wedding Cakes and Sugar Flowers magazines. She is a Gold award winner in Floral Sugarcraft at Cake International, Birmingham, 2016.

Barry Johnson is a highly talented, classically trained pastry chef and chocolatier. He is reigning UK and Ireland World Chocolate Master and represented the UK at the World Chocolate Master in Paris in November 2018 where he finished 8th in the world. Barry trained as a pastry chef at The Connaught Hotel and Raymond Blanc’s Le Manoir aux Quat’ Saisons. Working at The Wolseley, Harrods, and as Head Pastry Chef at the Jumeirah Carlton Tower Hotel. Previously he was the Principal Chocolatier for renowned confectioners Rococo Chocolates. Barry’s keen attention to detail, innovative approach and natural teaching ability means he is in much demand across the world. He is devoted to sharing his skills with others, both the classical approach to patisserie and chocolate as well as innovative, modern techniques.
