On this 1-day course expert tutor Mark Tilling will share with you the secrets for creating a variety of delicious chocolate miniature cakes. Find out how to make impressive and decorative individual chocolate treats, such as chocolate mousse with a chocolate glaze, chocolate cylinders filled with chocolate sponge and miniature chocolate boxes.

Under Mark’s expert guidance, you will learn essential skills such as how to temper chocolate, and then shape it and how to get the most out of coverings such as Cocoform and sugarpaste. Make simple yet impressive chocolate decorations such as fans, panels and cigarillos and find out how to add flair to your chocolate work with decorative transfer sheets.

Due to the time restraints of the course, some elements of the cakes will be pre-made such as the chocolate mousses and sponges. All recipes and methods will be provided by Mark and these can be discussed in further detail on the day if needed.

Things you will learn: Tempering, piping, chocolate transfer sheets, using colours, texture mats, creating panels and fans.
