You will first work on dummy cakes to learn the techniques of sharp-edged cake covering with sugarpaste to achieve the perfect canvas. Emma will then show you how to stack and dowel your tiers to create a strong base for your floral decorations. You will go on to discover the secret to making hyper-realistic sugar blooms in a fresh and vibrant colour palette of pretty pinks, corals and a pop of bright blue, how to vein, wire and tape them together and how to work with texture to create drama and movement.
You will also learn how to add detail and depth using edible dusts, how to arrange and attach your blooms to your cake and the importance of foliage and filler flowers to finish your design.
