Also a regular contributor of Wedding Cakes magazine, Helen will share her carefully developed secrets for creating impressive sharp edged cakes without the use of royal icing.
Australian cake decorators have been employing this method for years, and Helen will pass on one of the different techniques which makes the process quicker, easier, and fail-safe.
Helen will take you through the trimming, shaping, levelling and assembling a mud cake with ganache. Discover how to achieve a perfect consistency of ganache to provide a smooth foundation for sugarpaste as well as helpful tips and hints on how to fix any problems along the way. Helen will expertly demonstrate the techniques and tools needed to create the sharpest of edges with your final sugarpaste layer and how to attach the cake to a board.
Finally, you will learn how to apply silver leaf and emboss a delicate lace pattern onto the sugarpaste surface to then then pressure pipe over this, finishing with picot dots and a running bead.
