Double-barrel (or double-height) cakes continue to be popular with brides-to-be and are great if you want to make a feature of a cake tier. Extended, double-barrel tiers also allow you to add height to a wedding or celebration cake without making it look too formal or imposing.

Things you will learn:

  • Discover Helen Mansey’s tried-and-tested methods for stacking and covering tall tiers so they look professional and remain stable.
  • assemble and dowel two regular tiers to make a double-layer cake using Helen’s central dowel technique
  • how to cover a tall tier with ganache and sugarpaste for a professional, sharp-edged finish
  • how to assemble a two-tier wedding cake with a double-barrel bottom tier
