People often think that choux pastry is going to be challenging to make but once you understand the process it is quite easy and you can make a whole range of pretty pastries that are sure to impress at dinner parties and special occasions. The Croquembouche is the star of many French wedding celebrations and is now more and more popular in the UK, Makiko will give you top tips and all the tricks of the trade to produce something quite spectacular.

What you will learn:

  • How to make Maki’s recipe for perfect choux pastry
  • How to pipe, bake and fill choux buns
  • How to make crème patisserie
  • How to make the perfectly coloured fondant icing
  • How to make the correct stage caramel to hold the buns in place
  • How to successfully build the Croquembouche tower
  • How to make rice paper flower decorations to finnish
