Expert tutor and demonstrator, Tessa Whitehouse, will teach you the essentials of making and working with royal icing, sharing her personal hints and tips about how to make the most of this versatile sugar medium.

  • How to adapt the consistency for different techniques
  • How to cover a round cake with marzipan ready for coating with royal icing
  • How to achieve a smooth and professional finish on a royal icing covering
  • How to create decorative elements including run-outs, piped borders and drop-line work and develop piping skill

You will leave this two-day course with the confidence to decorate using royal icing.
