Double-barrel (or double-height) cakes continue to be popular with brides-to-be and are great if you want to make a feature of a cake tier. Extended, double-barrel tiers also allow you to add height to a wedding or celebration cake without making it look too formal or imposing.

In just one day, you will learn how to assemble and dowel two regular tiers to make a double-layer cake using Helen’s central dowel technique.
