Double-barrel (or double-height) cakes continue to be popular with brides-to-be and are great if you want to make a feature of a cake tier. Extended, double-barrel tiers also allow you to add height to a wedding or celebration cake without making it look too formal or imposing.

Discover Helen Mansey’s tried-and-tested methods for stacking and covering tall tiers so they look professional and remain stable. In just one day, you will learn how to assemble and dowel two regular tiers to make a double-layer cake using Helen’s central dowel technique. You will also find out how to cover a tall tier with ganache and sugarpaste for a professional, sharp-edged finish. 

What’s more, Helen will show you how to assemble a two-tier wedding cake with a double-barrel bottom tier, so you can gain the confidence you need to create tall cakes at home.

You will leave this course with a tall, two-tiered wedding cake which you can take home and decorate, as well as a Squires Kitchen Certificate and a range of top tips from a professional wedding cake maker.
