Working on pre-baked cakes, award-winning cake designer, author and tutor Helen Mansey will teach you how to trim, shape, level and assemble a round and a square mud cake with ganache.
Discover how to create tempered ganache to provide a smooth attractive base for sugarpaste along with helpful tips and hints on how to fix any problems along the way.
Helen will expertly demonstrate the techniques and tools needed to create the sharpest of edges with your final sugarpaste layer, producing clean edges and crisp corners according to the shape of each cake. You’ll use the striking colour combination of Glamour Red and Bridal White sugarpaste for a classic Christmas feel.
Finally, Helen will show you how to attach each cake to a board – the finishing touch for a smooth and flawless finish.
